DON ZOILO UNFILTERED OLOROSO 15 YEARS 75 CL is a premium oloroso Sherry wine from the Williams and Humbert winery (D.O. Jerez-Xérès-Sherry, Spain). It belongs to the prestigious “Don Zoilo” collection (in honor of Zoilo Ruiz-Mateos), and like its sibling the Amontillado, it is presented “en rama” (bottled unfiltered and without cold stabilization, preserving its purity, natural freshness, and authentic character of the winery).

It has an average age of 15 years in the solera and criaderas system, with exclusively oxidative aging (without a veil of flor), which gives it great depth and structure.

• Type: Dry Oloroso (dry), fortified, en rama (unfiltered).
• Grape: 100% Palomino Fino, from emblematic vineyards such as Añina and Carrascal.
• Color: Intense bright amber, with tones of old gold or luminous mahogany.
• Tasting notes:
  Nose: Very intense and characteristic of the style; powerful aromas of nuts (walnuts, toasted almonds, hazelnuts), fine wood, vanilla, hints of leather, tobacco, oxidative varnish, and subtle notes of dried citrus or orange peel.
• Palate: Dry, rich and balanced; full-bodied, velvety, with soft tannins, moderate but lively acidity, flavors of toasted nuts, dry caramel, old oak, marked salinity, and a long, harmonious, and persistent finish. Very structured, powerful yet elegant, with great vinous character and freshness thanks to the “en rama.”

Alcohol: 20% vol. (typical of olorosos in this range). Serving temperature: 14–16 °C (slightly chilled) or at room temperature. In a large catavinos glass or balloon glass to appreciate the complexity.
Recommended pairing: Aged or semi-aged cheeses (Manchego, Cheddar, Gouda), roasted red meats, game, Iberian cured meats, sautéed mushrooms, hearty stews, smoked fish, or as a digestif on its own. Excellent with robust dishes or paired with small amounts of dark chocolate.
