Origin and elaboration: This vinegar is made from organic Palomino Fino grapes grown in artisanal vineyards in the Marco de Jerez region. The elaboration process follows organic techniques, from grape growing to fermentation, acetification and aging, complying with the standards of the Protected Designation of Origin (P.D.O.) Vinagre de Jerez. It is aged using the traditional method of soleras and criaderas in oak casks, which contributes to its complex aromatic profile.
Characteristics:

- Aroma: Intense acetic notes with hints of apricot compote, offering a surprising freshness.
