Pastora Manzanilla Pasada En Rama 75 cl is a fortified wine from Bodegas Barbadillo, produced in the D.O. Manzanilla-Sanlúcar de Barrameda, Spain.

• Type: Manzanilla Pasada, a type of sherry with prolonged biological aging under a veil of flor, which gives it a complex and slightly oxidative character.
• Grape variety: 100% Palomino Fino.
• Aging: Approximately 9 years using the traditional system of criaderas and soleras in American oak barrels in the La Pastora winery, located next to the Guadalquivir River in Sanlúcar de Barrameda. This location favors biological aging thanks to the high humidity and proximity to the sea.
• Alcoholic strength: 15 % vol.

Tasting notes: Appearance: Clean and bright golden color. Nose: Intense, with aromas of yeast, saline notes, dried fruits and hints of chamomile and nuts (walnut, hazelnut, toasted sunflower seeds).

Palate: Complex, elegant, with saline notes, soft entry, subtle tannins and a long, slightly bitter finish. Retains freshness despite its age.

Elaboration: Bottled on the vine (unfiltered, straight from the barrel), thus retaining its raw character. Limited production; some sources indicate only 2000 units of certain lots, although annual releases can reach 10,000 bottles (year specified on the back label, e.g. 2022).

Serving: Serve preferably between 8 and 10 °C. Ideal for pairing with tapas, seafood or dishes with fruity touches thanks to its saline and nutty profile.

Awards: It has received major awards, including Platinum Best in Show at the 2017 Decanter World Wine Awards and a Gold Medal at the International Wine Challenge.

Historical note: Pastora, one of the first manzanillas bottled by Barbadillo in 1827, was reintroduced in 2000 after years of absence, becoming a favorite among sherry aficionados for its intensity and historical significance.
