Manzanilla Elías is a fortified wine of the Protected Designation of Origin (PDO) Manzanilla-Sanlúcar de Barrameda, produced by the prestigious Hidalga winery. This manzanilla is a clear example of the style of this type of wine, known for its freshness, salinity and unique character.

Origin and Production

  • Grape: It is made exclusively with Palomino Fino grapes, the main variety of the region.

  • Aging under the veil of flor: Manzanilla is aged biologically, that is to say, under a layer of yeasts called “velo de flor” (veil of flor). This process is carried out in cellars in Sanlúcar de Barrameda, where the humidity and temperature conditions, influenced by the proximity of the Atlantic Ocean, favor the development of the flower.

  • Soleras and Criaderas System: The aging of this wine is carried out using the traditional soleras system, which consists of a series of barrels stacked at different levels (criaderas). The wine is blended from the upper to the lower criaderas to obtain a homogeneous product of constant quality.

Tasting Notes

  • Appearance: Very pale straw yellow color, bright and transparent.

  • Nose: The aroma is very sharp and peculiar. Notes of yeast, bakery and saline notes stand out, with hints of almond and manzanilla, which give the wine its name.

  • Palate: In the mouth it is very dry and fresh. Salinity is one of its most notable characteristics, which makes it very pleasant and easy to drink. It is light, with a long and slightly bitter finish, which invites to continue drinking.

Pairing and Service

Manzanilla Elías is an ideal aperitif wine. Its saline character and acidity make it the perfect accompaniment to:

  • Seafood and fish, especially fried fish.

  • Iberian ham, as the wine cleans the fat in the mouth.

  • Olives and salted almonds.

  • The famous Andalusian “pescaíto frito” (fried fish).

It is recommended to serve it very cold, between 6º and 8º C, in a small white wine glass or, preferably, in a wine glass, to enjoy all its aromatic complexity.
