The Chinchilla Seis + Seis is a red wine from the P.D.O. “Sierras de Málaga”, produced by the Andalusian winery Doña Felisa. This wine is distinguished by its particular aging process, which combines barrel aging with resting in the bottle, seeking a perfect balance between fruit and wood.
Production and Aging
The name “Six + Six” refers to its aging process:

Aged for 6 months in French oak barrels.

6 months of bottle maturation in the winery before release.
The wine is made mainly with the Tempranillo grape variety, the queen grape of Ribera del Duero, complemented with Syrah, which adds a touch of spice and structure, and Merlot, which softens the whole.
Tasting Notes

Appearance: An attractive deep cherry red color with violet edges.

Nose: The aroma is complex and expressive. Red and black fruits (cherry, blackberry, plum) are combined with spicy and toasted notes (vanilla, coffee) from the barrel.

Palate: In the mouth it is a full-bodied, structured and elegant wine. It has a soft and round entry, with well integrated tannins. Its balanced acidity gives it freshness, and its finish is long and persistent.

Thanks to its structure and complexity, Chinchilla Seis + Seis is a very versatile wine that pairs very well with:
