Barbadillo Solear Chamomile is a classic dry sherry wine produced by Bodegas Barbadillo, a family winery founded in 1821 in Sanlúcar de Barrameda, Spain.
It is protected by the Chamomile-Sanlúcar de Barrameda D.O., made exclusively from Palomino Fino grapes and biologically aged under a veil of flor in the traditional criaderas and soleras system for an average of 6 years (longer than many chamomiles), which gives it exceptional finesse and intensity.
This75 cl bottle (standard size) is considered one of the benchmark chamomiles—often referred to by the winery as “the best chamomile in the world”—and is the flagship of the category worldwide. It is the best-selling chamomile in Spain and has appeared on Wine Spectator’s Top 100 list.
- Color: pale straw yellow with greenish reflections, bright and clean.
- Aroma: Intense and elegant: saline, iodine-like notes of sea breeze, chamomile, almonds, green apple, and a subtle yeasty/floral character coming from the flor veil.
- Palate: bone-dry, fresh and lively, with vibrant acidity, nutty flavors (almond/hazelnut), piercing salinity, and a long, harmonious finish. Light-bodied but full of personality — extraordinarily dry but smooth. Alcohol content: 15%.
- It is recommended to serve it well chilled (7–9 °C) as an aperitif or accompanied by seafood, olives, almonds, Iberian ham, fried fish, or savory tapas. It is extraordinarily versatile thanks to its saltiness and dryness.
