Don Zoilo Amontillado En Rama 15 Years 75 cl is a Jerez Amontillado wine Premium from the Williams & Humbert winery (D.O. Jerez-Xérès-Sherry, Spain). It is part of the “Don Zoilo” collection (in honor of Zoilo Ruiz-Mateos), and stands out for being on the branch (bottled unfiltered and unstabilized, which preserves its natural character, purity, and maximum freshness).

It is an Amontillado with an average age of 15 years in the solera and farm system: it starts as a Fino (biological aging under a flor yeast veil for about 8 years) and then undergoes oxidative aging (7 more years), which gives it balanced complexity.

Type: Dry Amontillado, fortified, en rama (not filtered).
Grape: 100% Palomino Fino.
Color: Bright amber, deep old gold, or golden amber, very luminous.
Tasting notes:
- Nose: Very sharp, intense, and complex; subtle reminders of the Fino it once was (yeast, flower), toasted hazelnuts, nuts (almonds, walnuts), hints of varnish, fine wood, vanilla, and elegant oxidative notes.
- PalateDry, round, velvety, and balanced; lively and fresh acidity (despite the 19% ABV), medium to full body, flavors of toasted nuts, dry caramel, aged wood, long finish, harmonious and very persistent. Accessible, with great freshness and typical characteristics of classic Amontillado.
Alcohol content: 19% vol.
Serving temperature12-14 °C (slightly cool) or at room temperature. In a catavinos glass or large white wine glass to appreciate aromas.
Recommended pairingIdeal appetizer with Iberian ham, aged or semi-cured cheeses (Manchego, Cheddar), olives, fried almonds, mushrooms, smoked fish, intense tapas, or white meats. Also with stews or dishes with nuts.
