Manzanilla Pasada en Rama Xixarito D.O.P Sanlúcar 75cl

These wines are made from Palomino grape musts obtained by gentle pressing and subjected to complete fermentation. Subsequent fortification to 15% vol. is conducive to biological aging, which must be carried out entirely in cellars located in Sanlúcar de Barrameda. The wine is then transferred to the manzanilla solera for aging under a veil of flor for 4-5 years and then to the solera de manzanilla pasada until completing its 10 years of biological aging under the criaderas and soleras system.

As a product called “pasada en rama” it combines two sonnets, one of them the freshness of a product twinned with its boot, and the other the finesse and elegance of its pre-oxidative balance.

The very special microclimatic conditions of our winery, located at the mouth of the Guadalquivir River, favor the development of a veil of flor and make it a product with very peculiar organoleptic characteristics.

Xixarito is a manzanilla pasada and on branch, that is to say, it has all the rotundity of a manzanilla pasada with the purity that it has not passed through any filter. The beauty of the south in its purest form.

Pairing: Mojama, Anchovies in Vinegar, Salted Cod, Cold Soups (White Garlic and Salmorejo), Sausages and Anchovies. Shushi, Vichyssoise, Ceviche and Tapenade.

He tells this when serving it: Xixarito was how José Rodriguez Jiménez was known, who in 1984 bought the winery and created the basis of what is now Bodegas Barón.

Xixarito is also the name of one of the best soleras of the winery. Formerly called San José and aged for up to seven years, it is a real treasure in the winery.
