The Tío Pepe Una Palma is an exceptional wine that is part of a very special selection of the González Byass winery. It is a limited edition of Tío Pepe Fino, chosen by the winemaker of the house for its evolution and its particular character.
The term “Una Palma” does not refer to a type of wine, but to the qualification given to the wine from the Tío Pepe solera that stands out for its finesse, cleanliness and aging potential. It represents an intermediate stage of a wine that has been under the flor veil for a long time and is reaching its maximum fullness, just before it begins to show the first signs of oxidative aging.

Aging: This wine comes from a selection of butts from the Tío Pepe solera that have undergone a longer biological aging than usual, around 6 years. This extra time under the flor veil gives it greater complexity and concentration.

Color: Intense gold with amber glints.
Tasting Notes

Nose (Aroma): Very complex and elegant. It combines the classic aromas of flower (almonds, yeast and bread) with more evolved notes, such as nuts (hazelnuts) and hints of spices and pastries.

Palate (Taste): Dry, very concentrated and with great structure. Silky on the palate, with vibrant acidity and a long, sharp finish. The notes of aging under flor can be appreciated, but with greater intensity and persistence.
Pairing
Due to its complexity, this fino is perfect for pairing with more elaborate dishes than the traditional Fino Tío Pepe:

Starters: Iberian acorn-fed ham, cured sausages and aged cheeses.

Fish: Bluefin tuna, cod and blue fish.

Oriental dishes: It combines very well with Japanese and Asian cuisine.
Service Temperature
It is recommended to serve it slightly cooler than a traditional Fino, between 10°C and 12°C, to appreciate its complexity and freshness.
