Tío Pepe was born in the albariza lands of Jerez, where the González family has been making this emblematic fino for more than a century. Produced with Palomino Fino grapes and aged in American oak casks under the traditional veil of flor, this dry wine stands out for its elegance, freshness and complexity. Its straw yellow color with greenish reflections anticipates a sharp and incisive aroma, with notes of almond, yeast and a subtle touch of low tide. The palate is dry and vibrant, with a light texture and a notably saline persistence.

Tío Pepe is an iconic wine and the world’s best known Fino, produced by the González Byass winery in Jerez de la Frontera, Spain. Its name pays tribute to the uncle of the winery’s founder, José Ángel, and the wine is a flagship of the Jerez-Xérès-Sherry Protected Designation of Origin.

  • Type of wine: Fino (generous dry).

  • Appellation of Origin: PDO Jerez-Xérès-Sherry.

  • Grapes: 100% Palomino Fino, the most common and representative white grape of the region.

  • Aging: This wine is produced using the traditional system of criaderas and soleras. The aging is biological, which means that a layer of yeast called velo de flor forms on the surface of the wine in the oak barrels. This veil protects the wine from contact with the air and gives it its unique characteristics: a sharp flavor, yeast notes and a distinctive dryness. Tío Pepe is aged for an average of more than 4 years.

  • Color: Pale and bright golden.

  • Aroma: Fine, sharp and complex. Notes of almonds, freshly baked bread, wild flowers and a subtle saline touch, characteristic of aging under flor.

  • Taste: Very dry, fresh and elegant. It is light in the mouth, with a balanced acidity and a long and persistent finish, which leaves a refreshing sensation.

Pairing

Tío Pepe is a versatile wine that is considered an excellent aperitif. Its dry and saline character makes it perfect to accompany a wide variety of dishes, especially savory ones:

  • Appetizers: Olives, salted almonds, Iberian ham, cured meats and cheeses.

  • Fish and seafood: Fried fish, cooked seafood (shrimp, prawns, etc.), oysters and sushi.

  • Spanish dishes: Tortilla de patatas, gazpacho, salmorejo and tapas in general.

Service Temperature

To enjoy all its properties, Tío Pepe should be served very cold, between 6°C and 8°C. It is recommended to store it in the refrigerator and consume it within a short period of time after opening, as the absence of the flower veil makes it sensitive to contact with air.
