As You Like It 50 cl is a fortified sherry with an Amontillado Medium Sweet profile, produced by Williams & Humbert using Palomino and Pedro Ximénez grapes. It has been aged for at least 30 years, has an alcohol content of 20% vol. according to the winery’s current specifications, and possesses an extraordinarily complex character: it combines the dry, toasty and deep character of an aged Amontillado with an elegant and enveloping sweetness.

This wine comes from a historic solera comprising just 27 casks, revived by the winery after decades of ageing. It is produced using the traditional ‘criaderas y soleras’ system of the Marco de Jerez, with prolonged oxidative ageing that develops an intense amber colour, a creamy texture and an unusual aromatic depth. The 50 cl bottle is perfect for savouring at a leisurely pace, as this type of wine retains its character for several days after opening if stored correctly enclosed and refrigerated.

In the glass, it displays a dark amber colour, with coppery glints and a slightly greenish rim, indicative of its long ageing. On the nose, notes of caramel, toffee, walnut, dates, raisins, coffee, vanilla, liquorice, fine wood and orange peel stand out. On the palate, it is full-bodied, velvety and concentrated, with a sweetness that is well-integrated by lively acidity and a warm structure; the finish is very long, leaving hints of nuts, candied citrus, cocoa and toasted caramel.

It is recommended to serve at between 12 and 14 °C in a small wine glass. It pairs particularly well with foie gras, blue cheeses, nuts, dark chocolate desserts, caramel tarts, citrus-based pastries and gourmet after-dinner treats. It is also an excellent choice as an aperitif served over ice or as an ingredient in signature cocktails.
