The Vino Fino Salinas de Chiclana de la Frontera is a fortified wine of the Protected Designation of Origin (PDO) Jerez-Xérès-Sherry and Manzanilla-Sanlúcar de Barrameda, produced by Bodegas Manuel Aragón in the Cadiz town of Chiclana de la Frontera. This wine is distinguished by its biological aging and its saline character, influenced by the proximity of the salt flats and the Atlantic Ocean.

Production and Aging

  • Grape: It is made exclusively with Palomino Fino grapes, the main variety of the region.

  • Biological aging: The wine ages under a layer of yeast called “velo de flor”, which protects it from oxygen and gives it its unique characteristics.

  • Soleras and Criaderas System: This wine is aged using the traditional soleras system, which consists of a series of barrels stacked at different levels (criaderas).

Tasting Notes

  • Appearance: Straw yellow color, bright and transparent.

  • Nose: The aroma is very peculiar and sharp. Notes of yeast, almond, bakery and a marked saline touch, typical of aging under flor and the influence of the nearby salt flats.

  • Palate: In the mouth it is very dry and light. Salinity is one of its main characteristics, which makes it very refreshing and easy to drink. The finish is long and slightly bitter, which invites to continue drinking.

Pairing and Service

Fino Salinas is an ideal wine for aperitifs and Andalusian cuisine. Its saline character and acidity make it the perfect accompaniment to:

  • Seafood and fish, especially “pescaíto frito” (fried fish).

  • Iberian ham and sausages.

  • Olives and salted almonds.

It is recommended to serve it very cold, between 6º and 8º C, in a wine glass to fully enjoy its nuances. It is an excellent choice for those seeking a fino with a marked Atlantic and saline character.
