Gran Reserva ham is a high quality cured ham, typically from white pigs (non-Iberian breeds such as Duroc), known for its rich flavor, smooth texture and long curing time, usually 15 to 24 months or more. It is a classic of Spanish gastronomy, often considered a gourmet product due to its meticulous production process and balanced flavor. Unlike Jamón Ibérico, it comes from non-Iberian pigs, which makes it more affordable, but still of exceptional quality. Key Characteristics: Origin: Mainly from Spain, with brands such as Joselito, Enrique Tomás and Eresma producing outstanding versions. Usually made from Duroc or other white breeds of pigs. Curing Process: Cured for a minimum of 15 to 24 months, sometimes up to 36 months, in natural or controlled environments. Longer curing enhances the intensity of flavor and texture. Flavor and Texture: Delicate, slightly sweet and less salty than standard hams, with a fine, marbled fat texture that melts in the mouth.
