Vineyard: Estate in the Sierra Norte de Sevilla
Harvest: Manual harvest at night in small capacity boxes.
Winemaking: Cold maceration. Fermentation in temperature-controlled stainless steel tanks. Malolactic fermentation in tank.
Aging: 36 months in new Spanish oak barrels
Tasting: The first aroma is clean, sweet, pleasant. It is followed by ripe red fruits, red plum and pink apple and after swirling it red licorice leaves, vanilla, pepper, elegant wood notes.
Dry but silky entry. A more polished than astringent tannin contributes to its elegance and depth.
Food pairing: wild boar or venison stew, roast lamb, cured cheese.
Serving temperature: 16º – 18º.
