Sábalo Vino Blanco Ecológico de Cádiz is a 75 cl organic white wine produced by Bodegas Barbadillo in Sanlúcar de Barrameda, Cádiz, Spain. Made from 100% organic Palomino Fino grapes grown in the albariza soils of the region, it has the IGP Vino de la Tierra de Cádiz appellation.

This wine pays tribute to the winery’s commitment to sustainability and its nearly 200 years of history. It is named after the shad, which symbolizes the adventurous spirit of the region, influenced by the sea, the marshes and the Guadalquivir River. Tasting notes: Appearance: Clean, bright golden color with metallic reflections.

• Aroma: Complex, with notes of ripe apple, peach and spicy nuances.
• Palate: Ample, creamy, with light notes of ripe fruit and a smooth, saline finish, reflecting its coastal origin.
• Alcoholic graduation: 13-13.5 % vol.
• Vinification: Slow fermentation in stainless steel at 17 °C, with aging on lees for four months to enhance its creaminess. Grapes from organic vineyards, such as Balbaína, Añina, Macharnudo and Burujena, are vinified separately to obtain a refined blend.

Pairing: Ideal with fish, seafood, cold meats, creamy poultry dishes or innovative combinations such as tofu, artichokes or cheese. Serve at 6-10 °C. Background: Launched as Barbadillo’s first organic wine, Sábalo reflects the expertise of winemaker Montse Molina and honors the legacy of poet and winemaker Manuel Barbadillo. It is part of a larger organic project, with 25 hectares of vineyards certified organic by 2022.
