Pico Cuadro Wild is a red wine from the Ribera del Duero D.O. (Castilla and León, Spain), produced by the Pico Cuadro winery in Quintanilla de Onésimo (Valladolid), in the area known as the “Golden Mile.”

• Variety: 100% Tempranillo (also known as Tinto Fino).
• Format: 75 cl bottle.
• Alcohol content: 14.5% ABV
• Aging: Typically 12 months in French oak barrels (some vintages specify 8–14 months). In some cases, it is not filtered to preserve a more natural character.

Vineyard: The grapes come from old vines (some over 100 years old, with an average age of 19–50 years depending on the plot) in specific vineyards in Quintanilla de Onésimo. The soils are poor and sandy, with clay and calcium. The grapes are hand-harvested into small crates.

Wine Profile: This is a modern and expressive Ribera del Duero, with good structure yet retaining freshness and fruitiness.

Tasting notes:

• Appearance: Deep cherry red color.
• Nose: Powerful, with ripe red fruit (strawberries, cherries, blackberries), mineral notes, balsamic hints, cedar, and sweet spices.
• Palate: Medium-high body, ripe and silky tannins, good acidity, flavorful and long-lasting. Fresh fruity sensations combined with a touch of oak.

Recent vintages such as 2021 stand out for their tight fruit (strawberries and spiced cherries), firm structure, and pleasant finish. It is a wine with a “wild” personality (hence the name Wild), balanced between ripeness and freshness thanks to the vineyard’s location in an open area of the valley.
Recommended pairing: Red meats, roasts, stews, cold cuts, and aged cheeses. Serve at 16-18°C.
