Pata Negra Cepas Viejas is a reserve red wine from the PDO Valdepeñas region, Spain, made by García Carrión. It is made from Tempranillo grapes grown in well-drained clay-limestone soils, benefiting from the dry and sunny climate of the region. The wine has a bright cherry red color with coppery reflections, with intense aromas of ripe black fruit, toasted notes and spices. The palate is complex, intense and silky. Pairs well with roast lamb, suckling pig, Iberian cured meats, cured cheeses or can be enjoyed on its own. Serve at 14-18 °C, ideally decanted or opened one hour before drinking.

Red
This wine has been made exclusively with previously selected Tempranillo grapes. For the elaboration of this wine a cold pre-fermentation maceration is carried out in order to obtain the best aromatic potential and color components. The maceration is prolonged for five days and is devatted 2/3 of the way through fermentation so as not to force the extraction of tannin and to avoid aggressiveness in the mouth. The newly fermented wine is racked and remains at rest until malolactic fermentation is complete.
