It is characterized by its small size, buttery texture and thin skin, ideal for stews such as cocido madrileño, salads or main dishes.

Preparation recommendations:Soak in warm water the night before.
Cook in boiling water, preferably with low mineralization water if the local water is hard.
Add salt at the end of cooking to prevent hardening.
