El Mirlo Seville White Wine 75 Cl

The Mirlo Blanco de Sevilla 75 cl is an organic white wine produced by Bodegas Tierra Savia in Cazalla de la Sierra, in the Sierra Morena Natural Park of Seville, under the geographical indication V.T. Sierra Norte de Sevilla.

It is made exclusively from the Viognier grape variety, considered the queen of white grapes, known for its difficult viticulture but exceptional results. Here are its main characteristics based on available information:Wine Characteristics:Varietal: 100% Viognier.
Winemaking: Grapes harvested by hand in mid-August, from vines over 20 years old grown on trellises and strict dry farming, on clay-loam soils with a predominance of red slate.
Destemming and soft pressing, fermentation in stainless steel tanks of up to 2000 liters at 20ºC.
Resting on lees for 4-5 months in stainless steel tanks, with light filtering and a minimum of 2 months in bottle.

• Alcohol: Between 11.5% and 12.5% vol. depending on the vintage, with less than 1.5 g/l of residual sugar.
• Tasting: Color: Greenish yellow with golden reflections, clean and bright.
• Aroma: Very aromatic, with tropical notes (banana, pineapple, mango) and floral, mineral and citrus touches.
• Taste: Fresh, ample, voluminous, with good natural acidity. Balanced, with exotic notes and a long, harmonious finish.
• Pairing: Ideal with fish, seafood, rice dishes, fresh cheeses (such as goat cheese) and appetizers. Not recommended with spicy dishes.
• Serving temperature: 6-12 ºC.
• Presentation: 75 cl burgundy bottle, in boxes of six units.
• Acknowledgements: Silver Medal at the International Organic Wine.
