Don Zoilo Palo Cortado is a premium sherry wine produced by Bodegas Williams & Humbert in Jerez, Spain, under the Jerez-Xérès-Sherry Appellation of Origin. • Grape Variety: 100% Palomino.
• Vineyards: From Jerez Superior, specifically from the Añina and Carrascal vineyards.
• Alcoholic graduation: 19.5%-20% Alc./vol.
• Aging: Minimum 12-15 years through the traditional system of Criaderas and Soleras, with oxidative aging after an initial phase of biological aging under flor. The wine begins as a Fino, but evolves, leading to alcohol fortification (up to 18°) and prolonged aging.
• Tasting notes: Color: Old gold. Aroma: Intense, penetrating and complex, with notes of nuts, hazelnuts and subtle oxidative nuances.
  Palate: Dry, silky, balanced acidity, full-bodied, elegant and persistent, with a very expressive aftertaste.

Winemaking: Made from first press musts (yema), cold static decanting, fermentation at 22 °C, early racking and fortification at 15 °C for biological aging. Barrels that differ from the desired Fino profile are “cut” with alcohol and redirected to the Palo Cortado solera.
Food Pairing: Pairs well with nuts, cured cheeses, charcuterie, game meats, stews, mushrooms, truffles, spicy dishes or Asian cuisine. Serve at 12-14 °C (some sources suggest 14-16 °C) in a wide glass to enhance the aromas.
