HARVEST AND GRAPE SELECTION September rains helped ripening. The harvest was rated Very Good by the Control Board of the D.O. Ca Rioja. WINEMAKING AND FERMENTATION In small French oak vats at controlled temperature to achieve maximum extraction of aroma and color. Afterwards, malolactic fermentation without racking, only with the movement of the lees by batonage. Aged for 19 months in new French oak barrels. TASTING NOTES Ruby red of high intensity. Clean, bright and dense tear. Aromas of fresh black fruit and ripe cherries. Hints of white pepper, eucalyptus forest and mint. The tertiary aromas of wood are manifested with hints of dark chocolate, coffee and cigar box. The palate is long and unctuous, with fresh acidity and ripe tannins. Balanced and youthful. FOOD PAIRING This 100% Tempranillo is a good companion for mushroom and truffle dishes, spicy stews and soft cheeses, game stews and dark chocolate-based desserts. Drink between 18º C and 19º C.
