Winemaking and aging: these are wines made from extremely fine palomino musts, initially capped at 15% vol. and identified with a “palo” or oblique stripe. At the end of the over-vatting phase, the taster’s verification of the existence of certain very specific characteristics in some of the butts in which they have been kept under flor veil will determine their classification as potential cut palos (illustrated in the butts with a horizontal stripe cutting through the original “palo”). Natural in American oak butts (600 liters capacity) with no added yeast, aged for 6 months on lees. A first year of biological aging and subsequent oxidative aging in American oak barrels.
