The grapes come from old vines over 15 years old with low yields under irrigation, located in an extreme climate with very cold winters and very hot summers.
The grapes are harvested by hand in 20 kg boxes and vinified in stainless steel tanks at a temperature of 24ºC, allowing maceration for 21 days.
Aging after malolactic fermentation consists of aging in new French and American oak barrels for a minimum period of 10 months.
