Being a wine with a touch of sweetness, it breaks the typical rules of dry white wine:

  1. Spicy Food: Spectacular with Thai, Mexican food, or sushi with wasabi (the sweet calms the spiciness).

The Secret of its “Sweetness” (Fermentation Stop)

Unlike natural sweet wines (where the grapes are left to dry), this is a semi-sweet wine with interrupted fermentation.

  • The winemaker stops fermentation by cooling when some of the grape’s natural sugars remain (residual sugar).

  • This makes the alcohol moderate (it usually ranges around 10.5% – 11% ABV), which makes it perfect for those who don’t want a “heavy-headed” or very strong wine.

2. The Verdejo grape: The star

Although Viña Albali is from Valdepeñas (Castilla-La Mancha), it uses the Verdejo grape, famous in Rueda but adapted here to a warmer climate.
