The frigate mackerel is a type of small mackerel (Auxis rochei), common in the Mediterranean Sea, especially in the Andalusian coast of Spain. It is considered a blue back fish, similar to tuna or common mackerel, but smaller in size, with a typical weight of less than 600 grams and an approximate length of 55 cm. The term “canutera” comes from the appearance of its fillets, which when processed resemble small tubes or “canutos”.
Main characteristics:
Appearance: The canutera frigate tuna has a slender, elongated body with a bluish purple skin without scales. Its fillets are white to grayish in color, as opposed to the more pinkish tone of the conventional frigate tuna, and have a delicate and compact texture.

Flavor: It is known for its mild and pleasant flavor and aroma, which makes it a highly appreciated ingredient in gourmet cuisine.

Season: It is usually harvested from June to October on the Andalusian coast (e.g., from Malaga to Huelva).

Nutritional benefits:
High in protein: Low in fat and calories, ideal for healthy diets.

Omega-3 fatty acids: Promote cardiovascular health by reducing cholesterol and triglycerides.

Vitamins and minerals: Rich in vitamins A, D and B (niacin), and minerals such as calcium, iron, phosphorus and magnesium.

Preparation and use:
The frigate tuna is usually preserved in high quality olive oil, following traditional artisanal methods, especially in regions such as Barbate and Ayamonte. The process involves:
Decapitation and cooking with precise salting.

Manual peeling and filleting to guarantee quality.

Packed in olive oil without preservatives, which gives it a shelf life of up to 5 years.

It is versatile in culinary applications, perfect for:
Salads, toasts or sushi.

Pairs well with piquillo peppers or in dishes such as green salad or sweet and sour salad.

Enjoy it straight from the can as a nutritious snack.

Comparison with conventional frigate tuna:
Size: The canutera frigate tuna is smaller (<600 g) compared to conventional frigate tuna (up to 1.5 kg).

Color: The fillets of canutera frigate tuna are whiter, while the flesh of conventional frigate tuna is pinker.

Texture: The canutera frigate mackerel is finer and more delicate.

Cultural and commercial importance:
Basic of the Mediterranean diet, the frigate tuna is appreciated in Andalusia and internationally recognized as a gourmet product, often holding the IGP “Melva de Andalucía” certification.

Its high production cost and seasonal scarcity lead to its high price.
