The preparation of Los Palacios products strictly follows the traditional recipe that the grandmother of the founder of Tierra Palaciega taught them to cook. This is the traditional recipe used by the older women of Los Palacios during the summer season to prepare fried tomatoes with the tomatoes that their relatives brought them from the fields.
The process is artisan, elaborating by hand fried tomato, tomato jam and homemade ratatouille over low heat, with a cooking time of between three hours and three and a half hours, achieving a slow and adequate reduction of the raw material, and obtaining only a jar of 365 g per kilo and three hundred and fifty grams of peeled natural tomato.
