Tierra Palaciega Tomate Frito is an artisanal fried tomato sauce from Los Palacios y Villafranca, Seville, Spain, recognized for its high quality and traditional preparation. It is made with naturally ripened tomatoes, hand-picked in the company’s own fields, which guarantees optimum flavor. The recipe, based on a traditional family formula, uses fresh local vegetables, extra virgin olive oil (3.3-4%), onion, bell pepper and salt, and some versions include a little sugar. The sauce is simmered for three to three and a half hours, reducing 1.35 kg of fresh tomatoes to a 365 g jar. The result is a thick, flavorful product, free of artificial preservatives, colorings, gluten and lactose, making it suitable for vegans.

A sugar-free version is also available, with 267 g of tomato per 100 g of product.

The sauce has attracted the attention of chefs such as Martín Berasategui and David de Jorge, who recommended reducing the oil content for a healthier sauce. It is versatile for recipes such as risotto, pizza or pasta, and has the Los Palacios Tomato Collective Brand and Global Gap certification for sustainable agriculture.
