Canned anchovies are a typical product of Spanish gastronomy, especially in coastal regions such as Andalusia, Cantabria and the Basque Country.
In the preparation of the `Boquerones de la costa en aceite de oliva’ there are a series of steps to follow. The first step is the reception of raw materials (always fresh), which arrive at the facilities directly from the port.
Texture and flavor: They are tender, with a delicate flavor, slightly acidic due to the vinegar, and less salty than salted anchovies.
Culinary uses: They are consumed as an appetizer, in tapas (for example, in pintxos or montaditos), in salads, or as an accompaniment to dishes such as Russian salad. They are a classic in Spanish bars and restaurants.
Storage: They are sold in cans, glass jars or plastic containers and should be kept refrigerated. Once opened, they are best preserved immersed in their oil or vinegar.
One of the key steps to achieve our exclusive flavor is the addiction with the best olive oils from Andalusia. Subsequently, the cans are hermetically sealed and sterilized in autoclaves to obtain a totally sterile product.
At this point, the cans are washed and dried before being cartoned and boxed. The process concludes with the storage of the product for subsequent shipment.
Isla Cristina, located in Huelva, Spain, on the Costa de la Luz, is renowned for its centuries-old tradition in the production of high quality canned and salted fish, especially tuna, mackerel and frigate mackerel. This coastal town has a rich maritime heritage, with fishing and canning industries dating back to the 18th century, influenced by the Catalan and Levantine settlers who exploited the abundant sardine and tuna fishing. The industry experienced significant growth in the 19th century, when Ayamonte and Isla Cristina became key centers for fish processing, taking advantage of traditional techniques such as salting and canning, which date back to Phoenician and Roman times.
Unión Salazonera Isleña (USISA): A leading Andalusian company founded in 1973, USISA processes more than 12,000 tons of fish per year at its factory in Isla Cristina, focusing on canned and salted fish under brands such as Tejero, USISA and El Decano. Its products, such as mackerel, frigate mackerel and mojama (air-dried tuna), are protected by Protected Geographical Indications (PGI) for their quality, prioritizing manual processing, natural ingredients such as sea salt and olive oil, and sustainable practices. USISA avoids the use of chemical additives, thus guaranteeing maximum freshness and nutritional value.
