At Tío Pepe, we are proud to present Una Palma, an exceptional fino that reflects the purest essence of our vineyards in the Macharnudo and Carrascal estates. This wine has been carefully aged for 6 years under biological aging, following the traditional system of criaderas and soleras. From a total of 139 butts, we have meticulously selected three to offer you this oenological jewel.

Elaboration:

• Variety: 100% Palomino Fino
• Alcoholic content: 15.5% vol.

Tasting notes:

• Appearance: Straw yellow color with golden reflections, clean and bright, with a light tear.
• Aroma: Intense and sharp nose, with notes of flower veil, chalk, nuts, and citrus, saline and mineral nuances.
• Palate: The palate is fresh, saline and tasty. The finish is persistent and balanced, leaving hints of salt, hazelnuts, yeast, green olives and lemon, culminating in a dry and slightly bitter aftertaste.

Pairing: Una Palma is an exceptional aperitif that also goes perfectly with seafood stews, rice and pasta dishes. It also enhances the flavors of Asian cuisine, now appreciated all over the world. It is recommended to serve chilled in a fine crystal glass to appreciate all its qualities.
