Description

This is a “pipiola” manzanilla but enormously pleasant. Made from Bodegas Barrero’s own vineyards in one of the best vineyards in the Marco de Jerez: Balbaína, located in the area known as Jerez Superior. Saline, fresh and unforgettable.

Tasting

Appearance: Straw yellow color.
Nose: iodized and mineral notes, saline and very fresh.
Palate: Fresh, saline, very persistent.
Serving temperature: Between 8 and 10 ºC.
Pairing: Seafood, fish, rice dishes and cold meats.

Vineyard and winemaking

Name: Pago Balbaína
Description: Own vineyards: Las Cañas and La Soledad (Jerez Superior).
Soil: Albariza.
Vinification: Fermentation with indigenous yeasts in the winery of Viña Las Cañas.
Aging: 4 years of average ageing, in the traditional dynamic system of criaderas and soleras.
Bottling: 6 to 8 bags per year.
