The elaboration of the Spanish rosé wine from Tierra de Cádiz of our winery takes place on a hillside of the Guadalete River, in the Cortijo de Torrecera, where the bottling also takes place. In the vines begins the elaboration process that will result in an excellent Spanish rosé wine of pale pink color.
Our area is included in the Protected Geographical Indication Cadiz, which all the wines of our winery enjoy. This is thanks to the atmospheric characteristics and the excellent geographical location that the Cortijo enjoys. The proximity of the Atlantic Ocean has a regulating effect on the aging of the grapes, which strengthens the process and gives the wine unique characteristics that we can associate with the region of Cadiz.
A good rosé wine to live good moments
The distinguished colors of rosé convey endearing and romantic sensations that invite us to enjoy wine in good moments of our life. Good rosé wines usually stand out for their pale tonality and colors that make us fall in love.
The rosé wine comes from red grapes. In our winery we use Tempranillo, Syrah and Merlot grapes, which are pampered by our trusted vine growers. In our Cortijo we take care of the details so that the vines are in the best conditions.
One aspect to mention, and contrary to a generalized idea, is that rosé wine is not the blend of white wine and red wine; it is considered a red wine with little maceration. The origin of the pinkish color is given by the winemaking methods.
There are several widespread techniques to obtain the pink color. Among them are the method of contact with the skins and the bleeding or saignée. Both are used to give the characteristic color of rosé wine. The first method is based on using the skins of the grapes to color the must, taking different shades depending on the time they remain doing this action. The second uses the pink juice that is separated in the winemaking process.
Catalog/Type: Rosé Wine
Vineyard: Vines trained in double cordon with 4-12 years of age, planted on gentle hills with southeast exposure and an altitude of 50 to 70 meters.

Winemaking process: Selected night harvesting of each variety separately with gentle pressing in an environment with inert gas to preserve varietal aromas. Light skin maceration of only 30 minutes prior to pressing to take color. Devatting for 24-48 hours at 7ºC and subsequent alcoholic fermentation at 16ºC. Finally, it is kept on its fine lees until the days prior to bottling.
Tasting notes: Very pale pink color, slightly coppery, clear and bright. The nose displays aromas of fresh red fruits such as strawberry, raspberry and cherry lollipop. The palate is soft, with a delicate and sweet entry, followed by excellent freshness and acidity that make its passage pleasant and round. A rosé born near the Atlantic, with a Mediterranean vocation.
Food pairing: Ideal with pasta, rice dishes, salad, marinated meats or fish, sausages and cheeses.
Soil characteristics: Limestone soils of variable grain and degree of compaction.
Climatic characteristics: Typical Mediterranean climate with Atlantic influence with warm, dry summers and mild, humid winters; the breeze from the Atlantic Ocean brings freshness and is the source of most of the rainfall.
