Viticulture and Winemaking:
These wines are made from Palomino variety musts, obtained by gentle pressing and subjected to complete fermentation. The subsequent heading at 15% favors biological aging, which must be carried out entirely in cellars located in Sanlúcar de Barrameda. The very special microclimatic conditions of our winery, located at the mouth of the Guadalquivir River, favor the development of a veil of flor with very peculiar organoleptic characteristics. This biological aging lasts for a period of three to four years and is carried out in American oak casks using the traditional system of criaderas and solera.
Average aging of 3 to 4 years in solera and criaderas.
Tasting notes:
Pale straw color. Clean and intense nose with attractive notes of fresh grass, fruity and with depth. The palate is fresh, with soft bitterness, very good acidity, with a simple but pleasant passage through the mouth. Good development.
Recommended Food Pairing:
Mojama, anchovies in vinegar, salted cod, cold soups (white garlic and salmorejo), sausages and anchovies, shushi, vichyssoise, ceviche and tapenade.
