In the preparation of the “Sardinillas de la costa en aceite de oliva” there are a series of steps to follow. The first step is the reception of raw materials (always fresh), which arrive at the facilities directly from the port.
After reception, the fish is beheaded, gutted and the tail is cut off. All parts are hand cleaned by staff in a brine bath and packed according to size. The fish pieces are then turned and cooked in the direct steam cooking tunnel.
One of the key steps to achieve our exclusive flavor is the addiction with the best olive oils from Andalusia. Subsequently, the cans are hermetically sealed and sterilized in autoclaves to obtain a totally sterile product.
At this point, the cans are washed and dried before being cartoned and boxed. The process concludes with the storage of the product for subsequent shipment.
