GARCÍA DE LA JARA CÁDIZ RED, 75CL

VARIETIES: Petit Verdot (40%), Tannat (30%), Tintilla de Rota (30%)

VINEYARD: The two hectares of vineyards are less than 100 meters from La Jara Beach in Sanlúcar. Being so close to the sea, the soil is sandy and there is a microclimate of fresh, salty air. About 20 years ago, one hectare of Muscat free-standing vineyard was over-grafted with the Cadiz Tintilla de Rota and Atlantic Tannat varieties. The remaining hectare was planted with Petit Verdot fifteen years ago.

VITICULTURE: Organic viticulture has always been done on the estate, now, we also have Organic Certification. The vineyard is home to a lot of local wildlife, including chameleons, and it is not uncommon to find birds’ nests among the vines.

VINIFICATION: The grapes are picked by hand at night, we use head flashlights! The Petit Verdot grapes arrive first, usually followed a week or two later by the other varieties. The grapes are hand sorted and destemmed, then macerated in stainless steel tanks for a few days until fermentation with natural yeasts takes place. After malolactic fermentation, also spontaneous, the different varietals are blended. The wine is then transferred to second-use Bordeaux barrels where it rests for 6 months to soften some of the grape tannins. Bottling is done without fining or filtering. The wine is kept in bottle for about 6 months before release.

TASTING NOTES: Smooth and silky, plums, chocolate and cedar on the nose. Fresh fruit, balsamic and herbal notes. Mineral and saline on the finish.

Aroma: Reserved at first, it gradually unfolds a whole range of complex and subtle aromas. Notes of plums, citrus and fresh tones, complemented by chocolate, ripe red fruit, vanilla, tobacco and cedar.
