Pata Negra Reserva D.O.P. Valdepeñas Añada 2016 75cl

Pata Negra Valdepeñas is a Spanish red wine from the Protected Designation of Origin (PDO) Valdepeñas, made by García Carrión, a leading winery founded in Jumilla in 1890. It is made mainly from Tempranillo grapes, known for their balanced acidity, sugar and phenolic compounds, grown in soils with low clay content, high limestone content and good drainage, in a dry and sunny climate.

Pata Negra Valdepeñas Reserva:
Winemaking: Made from selected Tempranillo grapes, fermented at 25-30 °C with about 20 days of maceration to obtain structure and color. After malolactic fermentation, it ages for 12 months in American and French oak barrels, and then in bottle.

Tasting Notes: Intense garnet or ruby red color with tile reflections. Aromas of blackberry, cherry, plum, mocha, cassis, black tea and roasted coffee. In the mouth, it is full-bodied, smooth, with soft, round tannins, a velvety texture and a toasty, lingering finish.

Food pairings: Combines with meat stews, game, roasted meats, artisan cheeses, tapas and even spicy dishes.

Alcoholic strength: ~13 % vol.

The grapes are destemmed and placed in stainless steel tanks at 24ºC where fermentation takes place respecting the integrity of the grapes. The wine is pumped over daily to bring the liquid part into contact with the solid part, favoring the extraction of color, aromas and tannins, which are important for aging in barrels. After an extended period of fermentation, the wine is devatted by separating the wine yolk from the press.
