The Tarifa frigate tuna is a prized tuna-like blueback tuna (Auxis rochei or Auxis thazard) from the Mediterranean Sea, caught using the traditional and sustainable almadraba method in the waters of Tarifa, Cadiz. It is larger than the frigate tuna, with a typical weight of about 1.5 kg and a length of about 50 cm, with a robust, rounded body and a purplish or black head. Its flesh is pink, tender and tasty, making it a delicacy in Andalusian cuisine, often confused with tuna due to its similarity.

Characteristics and nutritional value: Rich in protein, low in fat and calories, and rich in omega-3, vitamins (A, D, B) and minerals (calcium, iron, phosphorus, magnesium), it promotes cardiovascular health and cholesterol regulation. Its delicate and juicy texture and intense flavor make it versatile for culinary use.

Culinary uses: Normally preserved in sunflower or olive oil, almadraba frigate tuna is used in salads, stews, sushi, toast or as an appetizer. Artisanal producers such as Conservera de Tarifa use traditional methods, filleting by hand and canning without preservatives. The fish is caught between June and October, with high season from late August to early October.
