Le Patinegro est un vin blanc biologique produit par les Bodegas Barbadillo \u00e0 Sanl\u00facar de Barrameda, en Espagne, sous l’appellation Vino de la Tierra de C\u00e1diz. \u00c9labor\u00e9 \u00e0 partir de raisins Palomino Fino 100 % biologiques provenant de deux vignobles certifi\u00e9s biologiques – l’un pr\u00e8s de la mer et l’autre \u00e0 l’int\u00e9rieur des terres, surplombant les marais entre Sanl\u00facar et Trebujena -, il refl\u00e8te le sol albariza unique et les influences maritimes de la r\u00e9gion. Le vin est ferment\u00e9 dans des cuves en acier inoxydable avec des levures indig\u00e8nes et vieilli pendant un an dans de vieux f\u00fbts de ch\u00eane manzanilla, ce qui lui conf\u00e8re une nuance saline caract\u00e9ristique.
Sa couleur est l\u00e9g\u00e8rement dor\u00e9e, avec des notes min\u00e9rales complexes, des ar\u00f4mes subtils provenant du vieillissement en barrique et un palais sec et cr\u00e9meux, avec une finale douce et sal\u00e9e. La Patinegro n’est pas clarifi\u00e9e, mais l\u00e9g\u00e8rement filtr\u00e9e, ce qui renforce son caract\u00e8re naturel. Il accompagne les plats de poisson, les soupes aromatis\u00e9es, le tofu, les artichauts ou le fromage. Son taux d’alcool se situe g\u00e9n\u00e9ralement entre 13 et 13,5 % et il est recommand\u00e9 de le servir \u00e0 une temp\u00e9rature comprise entre 6 et 8 \u00b0C.
