\u00c9laboration et vieillissement<\/strong>: Issus de la fermentation compl\u00e8te des mo\u00fbts de raisin Palomino, les Olorosos sont des vins “professionnels” ; la structure particuli\u00e8re qu’ils pr\u00e9sentent d\u00e8s le d\u00e9but conseille aux d\u00e9gustateurs de les classer en vue d’un vieillissement oxydatif. L’entonnage initial \u00e0 17 % vol. d’alcool emp\u00eache le d\u00e9veloppement du voile de fleur, de sorte que le vin vieillit toujours expos\u00e9 \u00e0 la lente action de l’oxyg\u00e8ne par le biais du syst\u00e8me traditionnel des criaderas et des solera. La lente perte d’eau \u00e0 travers les parois des f\u00fbts en bois favorise un processus continu de concentration, qui permet au vin de gagner en structure, en douceur et en complexit\u00e9. <\/p>\n<\/div>\n
