Cette manzanilla est un exemple clair du style de ce type de vin, connu pour sa fra\u00eecheur, sa salinit\u00e9 et son caract\u00e8re unique. <\/p>\n<h3>Origine et production<\/h3>\n<ul>\n\t<li>\n<p><b>Raisin<\/b>: il est \u00e9labor\u00e9 exclusivement \u00e0 partir de raisins <b>Palomino Fino<\/b>, le principal c\u00e9page de la r\u00e9gion.<\/p>\n<\/li>\n\t<li>\n<p><b>Vieillissement sous un voile de fleur<\/b>: la Manzanilla est vieillie de mani\u00e8re biologique, c&rsquo;est-\u00e0-dire sous une couche de levures appel\u00e9e \u00ab\u00a0velo de flor\u00a0\u00bb. Ce processus est r\u00e9alis\u00e9 dans les caves de Sanl\u00facar de Barrameda, o\u00f9 les conditions d&rsquo;humidit\u00e9 et de temp\u00e9rature, influenc\u00e9es par la proximit\u00e9 de l&rsquo;oc\u00e9an Atlantique, favorisent le d\u00e9veloppement de la fleur. <\/p>\n<\/li>\n\t<li>\n<p><b>Syst\u00e8me de soleras et de criaderas<\/b>: l&rsquo;\u00e9levage de ce vin est r\u00e9alis\u00e9 selon le syst\u00e8me traditionnel des soleras, qui consiste en une s\u00e9rie de f\u00fbts empil\u00e9s \u00e0 diff\u00e9rents niveaux (criaderas). Le vin est m\u00e9lang\u00e9 des criaderas sup\u00e9rieures aux criaderas inf\u00e9rieures afin d&rsquo;obtenir un produit homog\u00e8ne et de qualit\u00e9 constante. <\/p>\n<\/li>\n<\/ul>\n<h3>Notes de d\u00e9gustation<\/h3>\n<ul>\n\t<li>\n<p><b>Aspect<\/b>: Couleur jaune paille tr\u00e8s p\u00e2le, brillante et transparente.<\/p>\n<\/li>\n\t<li>\n<p><b>Nez<\/b>: L&rsquo;ar\u00f4me est tr\u00e8s vif et particulier. Des notes de levure, de boulangerie et de sel ressortent, avec des nuances d&rsquo;amande et de camomille, qui donnent son nom au vin. <\/p>\n<\/li>\n\t<li>\n<p><b>Palais<\/b>: En bouche, il est tr\u00e8s sec et frais. La salinit\u00e9 est l&rsquo;une de ses caract\u00e9ristiques les plus remarquables, ce qui le rend tr\u00e8s agr\u00e9able et facile \u00e0 boire. Il est l\u00e9ger, avec une finale longue et l\u00e9g\u00e8rement am\u00e8re, qui invite \u00e0 continuer \u00e0 boire.  <\/p>\n<\/li>\n<\/ul>\n<h3>Appairage et service<\/h3>\n<p>Le Manzanilla El\u00edas est un vin d&rsquo;ap\u00e9ritif id\u00e9al.
