Voici ses principales caract\u00e9ristiques : Type : Palo Cortado, un x\u00e9r\u00e8s singulier et complexe qui allie la finesse d&#8217;un Amontillado \u00e0 la richesse d&#8217;un Oloroso. <\/p>\n<ul>\n\t<li>C\u00e9page : 100% Palomino.<\/li>\n\t<li>Vignobles : de Jerez Superior, en particulier des vignobles A\u00f1ina et Carrascal.<\/li>\n\t<li>Teneur en alcool : 19,5%-20% Alc.\/vol.<\/li>\n\t<li>Vieillissement : 12 \u00e0 15 ans minimum selon le syst\u00e8me traditionnel des Criaderas et Soleras, avec un vieillissement oxydatif apr\u00e8s une premi\u00e8re phase de vieillissement biologique sous un voile de flor. Le vin commence comme un Fino, mais il \u00e9volue, ce qui conduit \u00e0 une fortification en alcool (jusqu&#8217;\u00e0 18\u00b0) et \u00e0 un vieillissement prolong\u00e9. <\/li>\n\t<li>Notes de d\u00e9gustation : Couleur : vieil or. Ar\u00f4me : Intense, p\u00e9n\u00e9trant et complexe, avec des notes de fruits secs, de noisettes et de subtiles nuances oxydatives.<br>Palais : Sec, soyeux, acidit\u00e9 \u00e9quilibr\u00e9e, cors\u00e9, \u00e9l\u00e9gant et persistant, avec un arri\u00e8re-go\u00fbt tr\u00e8s expressif. <\/li>\n<\/ul>\n<p>Vinification : \u00c9labor\u00e9 \u00e0 partir de mo\u00fbts de premi\u00e8re presse (yema), d\u00e9cantation statique \u00e0 froid, fermentation \u00e0 22 \u00b0C, soutirage pr\u00e9coce et fortification \u00e0 15 \u00b0C pour le vieillissement biologique. Les f\u00fbts qui diff\u00e8rent du profil Fino souhait\u00e9 sont &#8220;coup\u00e9s&#8221; avec de l&#8217;alcool et redirig\u00e9s vers la solera Palo Cortado.<br>Accords mets\/vins : Ce vin se marie bien avec les noix, les fromages affin\u00e9s, la charcuterie, les viandes de gibier, les rago\u00fbts, les champignons, les truffes, les plats \u00e9pic\u00e9s ou la cuisine asiatique.
