Micro-vinification is the main guide behind the elaboration of Finca Moncloa wines, whose typicity lies in their grape varieties and the reflection of their terroir. The grapes were harvested by hand and selected in the vineyard. After malolactic fermentation, each variety was aged in new and second-use French and American oak barrels for more than twelve months.
