It is considered &#8220;the&#8221; quintessential manzanilla in the area, with an enormous solera (more than 16,000 casks) and frequent bottlings (up to 6 times a year) to maximize freshness. The name &#8220;La Guita&#8221; comes from Andalusian slang for &#8220;money&#8221; or &#8220;rope&#8221; (hence the string around the neck of the bottle in many versions).  <\/p>\n<p>Made 100% from Palomino Fino grapes from vineyards on albariza soil, it ages under a layer of flor yeast for an average of 4-5 years in the Pago Sanl\u00facar Viejo and Misericordia cellars, giving it a very marine, fresh, and saline character typical of Sanl\u00facar (strong Atlantic influence).<\/p>\n<p>It is a dry, vibrant, and saline manzanilla, with great freshness and complexity thanks to the active flor veil, ideal for daily consumption and as an aperitif. Very approachable and with excellent value for money, it is the most consumed manzanilla at fairs such as the one in Seville. <\/p>\n<ul>\n\t<li>75 cl bottle (with natural cork; often with decorative string around the neck).<\/li>\n\t<li>Color: Bright pale straw yellow, with subtle greenish or golden highlights.<\/li>\n\t<li>Aromas and flavor: Fresh and delicate nose with notes of green apple, lemon, almond, yeast, seaweed, intense saltiness, iodine, and floral\/citrus hints. On the palate, it is dry, light, crisp, very salty and mineral, with lively acidity, a persistent finish, and a subtle bitterness. Refreshing and with a strong sense of the sea.  <\/li>\n\t<li>Alcohol content: 15% ABV<\/li>\n\t<li>Residual sugar: 0 g\/L (total dry).<\/li>\n\t<li>Serving temperature: 6-8 \u00b0C (very cold, in tasting glasses or a wide sherry glass).<\/li>\n\t<li>Pairing: Perfect with seafood (shrimp, prawns, oysters), Iberian ham, fried fish, olives, cured fish, soft cheeses, Andalusian tapas, or fried snacks.
