It is produced under the Protected Designation of Origin (D.O.) Manzanilla-Sanl\u00facar de Barrameda. It is a fortified wine, biologically aged, with a more mature character (manzanilla pasada).  <\/p>\n<ul>\n\t<li>Grapes: 100% Palomino Fino, grown in vineyards on albariza soils (white limestone) typical of the region.<\/li>\n\t<li>Aging method: Organic aging under a flor yeast layer for approximately 8\u201310 years in century-old American oak barrels. This extended aging imparts greater complexity and depth, while preserving the freshness and brininess characteristic of Sanl\u00facar manzanillas. <\/li>\n\t<li>Alcohol content: 15% ABV<\/li>\n\t<li>Format: Available in a 75 cl bottle (as well as 50 cl, 37.5 cl, and other sizes).<\/li>\n\t<li>Appearance: Golden in color, clear and bright (more intense than young manzanillas, with golden or amber hues).<\/li>\n<\/ul>\n<p>Tasting notes:<\/p>\n<ul>\n\t<li>Appearance: Golden, clear, and bright.<\/li>\n\t<li>Nose: Medium-high aromatic intensity with notes of yeast (flor), chalk, and the minerality characteristic of albariza soil. Aromas of apple and dried seaweed, with a rounded, fresh finish. <\/li>\n\t<li>Palate: Dry, light-bodied yet full-bodied, very salty, persistent, and very well-balanced. It offers a rounded mouthfeel, with greater texture and length thanks to its extended aging. <\/li>\n<\/ul>\n<p>This is a full-bodied, aged manzanilla with a rounder, more complex profile than its younger counterparts, yet it retains the typical briny freshness of Sanl\u00facar. Food Pairing: Best served between 8 and 10 \u00b0C.<\/p>\n<p>It pairs perfectly with:<\/p>\n<ul>\n\t<li>fresh seafood<\/li>\n\t<li>fried fish<\/li>\n\t<li>oysters<\/li>\n\t<li>Seafood Rice Dishes<\/li>\n\t<li>Tapas and appetizers in general<\/li>\n<\/ul>\n<p>It can be enjoyed at any time, though it really shines as an aperitif or paired with a light meal. Notable Awards: It has received gold medals in competitions such as the 2016 International Wine Challenge (IWC), CINVE 2017, and the San Francisco World Spirits Competition (SWA) in several editions. About the winery and the brand Bodegas Yuste, founded in 1991 by Francisco Yuste, is one of Sanl\u00facar\u2019s most respected wineries as both a blender and producer.<\/p>\n<p>La marca Aurora es hist\u00f3rica: proviene de la viuda Aurora Ambrossy Lacave (principios del siglo XX), relacionada con las antiguas Bodegas Pedro Romero. Yuste adquiri\u00f3 la marca y parte de su solera en 2015-2016, combin\u00e1ndola con sus propias criaderas.
