This manzanilla is a clear example of the style of this type of wine, known for its freshness, salinity and unique character. <\/p>\n<h3>Origin and Production<\/h3>\n<ul>\n\t<li>\n<p><b>Grape<\/b>: It is made exclusively with <b>Palomino Fino<\/b> grapes, the main variety of the region.<\/p>\n<\/li>\n\t<li>\n<p><b>Aging under the veil of flor<\/b>: Manzanilla is aged biologically, that is to say, under a layer of yeasts called &#8220;velo de flor&#8221; (veil of flor). This process is carried out in cellars in Sanl\u00facar de Barrameda, where the humidity and temperature conditions, influenced by the proximity of the Atlantic Ocean, favor the development of the flower. <\/p>\n<\/li>\n\t<li>\n<p><b>Soleras and Criaderas System<\/b>: The aging of this wine is carried out using the traditional soleras system, which consists of a series of barrels stacked at different levels (criaderas). The wine is blended from the upper to the lower criaderas to obtain a homogeneous product of constant quality. <\/p>\n<\/li>\n<\/ul>\n<h3>Tasting Notes<\/h3>\n<ul>\n\t<li>\n<p><b>Appearance<\/b>: Very pale straw yellow color, bright and transparent.<\/p>\n<\/li>\n\t<li>\n<p><b>Nose<\/b>: The aroma is very sharp and peculiar. Notes of yeast, bakery and saline notes stand out, with hints of almond and manzanilla, which give the wine its name. <\/p>\n<\/li>\n\t<li>\n<p><b>Palate<\/b>: In the mouth it is very dry and fresh. Salinity is one of its most notable characteristics, which makes it very pleasant and easy to drink. It is light, with a long and slightly bitter finish, which invites to continue drinking.  <\/p>\n<\/li>\n<\/ul>\n<h3>Pairing and Service<\/h3>\n<p>Manzanilla El\u00edas is an ideal aperitif wine.
