It is produced in the town of Chiclana de la Frontera, in the province of Cadiz, and is distinguished by its particular elaboration &#8220;en rama&#8221;. <\/p>\n<h3>What does &#8220;en Rama&#8221; mean?<\/h3>\n<p>The term &#8220;en rama&#8221; means that the wine is bottled virtually as it comes out of the butt, without aggressive filtering or fining. This makes the wine purer and maintains most of its flor veil (a layer of yeast that protects and nourishes the wine during aging), which gives it a greater complexity of aromas and flavors. <\/p>\n<h3>Tasting Notes<\/h3>\n<ul>\n\t<li>\n<p><b>Appearance<\/b>: Straw yellow color, with golden reflections and a slightly cloudy appearance, due to the absence of intense filtering.<\/p>\n<\/li>\n\t<li>\n<p><b>Nose<\/b>: Very intense and complex aromas. Notes of yeast, dried fruits (almonds), bakery and saline touches, typical of aging under flor. <\/p>\n<\/li>\n\t<li>\n<p><b>Palate<\/b>: In the mouth it is very dry, sharp and full of character. The salinity is one of its most outstanding characteristics, along with a long and persistent finish, which invites a second sip. <\/p>\n<\/li>\n<\/ul>\n<h3>Pairing and Service<\/h3>\n<p>The Fino Chiclanero en Rama is an ideal wine for the aperitif. Its saline character and acidity make it the perfect accompaniment to: <\/p>\n<ul>\n\t<li>\n<p><b>Seafood and fish<\/b>, especially &#8220;pesca\u00edto frito&#8221; (fried fish).<\/p>\n<\/li>\n\t<li>\n<p><b>Iberian ham<\/b> and sausages.<\/p>\n<\/li>\n\t<li>\n<p><b>Olives<\/b> and salted almonds.<\/p>\n<\/li>\n\t<li>\n<p>Dishes of Andalusian cuisine.<\/p>\n<\/li>\n<\/ul>\n<p>It is recommended to serve it very cold, between 6\u00ba and 8\u00ba C, in a wine glass to better appreciate all its nuances.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<p>Fino en Rama is a fine wine of straw yellow color, aged under veil of flor in American oak barrels for more than 4 years. This wine is bottled directly from the butt, without filtration or fining, which preserves its purity and natural nuances.
