This wine is distinguished by its biological aging and its saline character, influenced by the proximity of the salt flats and the Atlantic Ocean. <\/p>\n<h3>Production and Aging<\/h3>\n<ul>\n\t<li>\n<p><b>Grape<\/b>: It is made exclusively with <b>Palomino Fino<\/b> grapes, the main variety of the region.<\/p>\n<\/li>\n\t<li>\n<p><b>Biological aging<\/b>: The wine ages under a layer of yeast called <b>&#8220;velo de flor&#8221;<\/b>, which protects it from oxygen and gives it its unique characteristics.<\/p>\n<\/li>\n\t<li>\n<p><b>Soleras and Criaderas System<\/b>: This wine is aged using the traditional soleras system, which consists of a series of barrels stacked at different levels (criaderas).<\/p>\n<\/li>\n<\/ul>\n<h3>Tasting Notes<\/h3>\n<ul>\n\t<li>\n<p><b>Appearance<\/b>: Straw yellow color, bright and transparent.<\/p>\n<\/li>\n\t<li>\n<p><b>Nose<\/b>: The aroma is very peculiar and sharp. Salinity is one of its main characteristics, which makes it very refreshing and easy to drink. The finish is long and slightly bitter, which invites to continue drinking.  <\/p>\n<\/li>\n<\/ul>\n<h3>Pairing and Service<\/h3>\n<p>Fino Salinas is an ideal wine for aperitifs and Andalusian cuisine. Its saline character and acidity make it the perfect accompaniment to: <\/p>\n<ul>\n\t<li>\n<p><b>Seafood and fish<\/b>, especially &#8220;pesca\u00edto frito&#8221; (fried fish).<\/p>\n<\/li>\n\t<li>\n<p><b>Iberian ham<\/b> and sausages.<\/p>\n<\/li>\n\t<li>\n<p><b>Olives<\/b> and salted almonds.<\/p>\n<\/li>\n<\/ul>\n<p>It is recommended to serve it very cold, between 6\u00ba and 8\u00ba C, in a wine glass to fully enjoy its nuances.
